1 ½ cups all-purpose flour 1 cup sugar ½ teaspoon salt ¼ teaspoon baking powder 2 pounds peaches slices ½ cup butter 1 ½ teaspoon ground cinnamon 1 egg 1 cup sour cream or heavy cream
1 Preheat oven to 350˚F. Combine flour, 2 Tablespoons of sugar, salt & baking powder. Cut in butter until mealy, try not to overmix.
2 Reserve 1/3 of flour mixture. Put remaining flour mixture over bottom and halfway up the sides of a 10 inch quiche pan, making a crust.
3 Combine remaining sugar & cinnamon; remove 1 Tablespoons of the mixture and combine with the reserved flour mixture.
4 Combine remaining sugar/cinnamon mixture with peaches, place in crust and bake for 15 minutes.
5 Beat egg, add sour cream and beat again. Pour over peaches.
6 Rub reserved flour/sugar/cinnamon mixture together to make crumbs. Sprinkle crumbs over sour cream/egg layer. Bake about 20 to 25 minutes longer or until juices are bubbling.
