Easy Italian


Learn about the different cuts of pork, the principles of roasting meats and vegetables, Italian flavors and cooking styles, and how to make several pasta sauces and quick pasta dishes. Chicken and rice is a classic combination to be found across the globe; we will explore the flavors of six different regions (East Asian, Indian, Middle Eastern, Mediterranean, Caribbean, and Mexican) combining pantry staples and easy to find items to capture the flavors of ethnic cuisines and to explore American fusion cooking.  In this class you will learn about the different types of chicken and cuts on the market and how to prepare them, varieties and methods for cooking rice, and sautéing vegetables and meats. You will also work with puff pastry and frangipane and prepare a delicious chocolate sauce. This class is part of our How to Cook Series.

Lamb and Risotto


Menu includes lamb with Bernaise sauce, risotto, sauteed vegetables and chocolate souffle. You will learn and compare the best lamb cuts for steak, how to make an emulsion sauce and learn how to make warm souffles. This class is part of our Savvy Chef Series.

Cornish Hens and Polenta


In this class you will learn about cornish hens and game fowl, how to make creamy and firm polenta dishes, how to make pastry cream and blind baking crusts. Deboning Chicken


In this class each student will debone a chicken as well as learn to make excellent chicken stock oven dried fruits and fresh fruit coulis. Menu includes boneless wild rice stuffed chicken, roasted tomatoes, Truffled Potatoes Anna, and individual panna cotta with oven dried fruits and fruit coulis. Bring your own wine.

In this class you will make a classic consommé as well as learn to make gnudi, parmesan tuilles and savory custards. Menu includes chicken consommé, classic Caesar Salad garnished with parmesan tuilles, veal cutlets with gnudi and lemon sorbet. Bring your own wine.

How to Cook Series


Through a series of three classes is an introduction to cooking. You will learn to sear, roast, sauté, deglaze and broil along with other techniques and approaches needed to make great meals within thirty minutes. Menus use common seasonal ingredients and each class discusses how to shop for them and how best to store them.  An emphasis is placed on understanding cooking methods and when to use them so that you will feel confident cooking without recipes and being creative.

Savvy Chef Series


These courses provide in-depth understanding of a wide variety of culinary techniques and ingredients. Celebrating community with locally-grown food

The first Farm Table Dinner will be held on Monday, January 28, 2008, at 6:30 pm at Tiny Boxwood’s, the new café at Thompson & Hanson garden center, located at 3614 W. Alabama at Saint Street. Baron Doke, the café’s chef, will prepare a seasonal feast with ingredients from the local growers from the Bayou City Farmers Market. Texas wines, chosen to complement the meal, will be served.

Eating locally-grown food requires a shift in the thinking of cooks as well as diners, and the organizers fondly hope that these shared meals will help us make that shift.  The supper will be served family style, at communal tables, so that we may enjoy the pleasures of the table as well as conversation with our friends and neighbors. Tiny Boxwood’s can accommodate about 45 people, so we look forward to an intimate evening. Local farmers and producers will share our meal so that we diners can appreciate the sources of our food.

Proceeds from the dinners will benefit the Les Dames d’Escoffier Culinary Scholarship program and Bayou City Farmers Market. Urban Harvest and Les Dames d’Escoffier plan to offer these farm dinners in January, April, June, and November.

Cheesecake and Flourless Chocolate Cake


In this class you will make a delicous New York cheesecake with a caramel sauce as well as a flourless chocolate cake.

Please Note: These cakes both need to be refrigerated for several hours before they can be moved. Cakes will be baked during class and will be packaged and ready to be picked up after noon the next day.

This is a great opportunity to introduce a young child to baking! You and your child will prepare, decorate and package three different types of cookies to bring home. You will learn great ways to let your child be involved in baking and cooking to foster their independence and creativity.
